Ingredients (all a slight guess as I winged it) - Served 2 adults and 2 small kids
1 cup cherry tomatoes, cut in half
1 avocado, finely sliced
1 cup shelled edamame (I used the frozen bagged ones and follow directions to heat)
1/3 cup cheddar cheese, chopped into small cubes (this could be left out, but come on...do you really want to?)
2 medium carrots, cut into thinly sliced pieces (I was aiming for "julienne" but my version was not as dainty)
2 cans tuna (I prefer skipjack/yellowfin/light as it's lower in mercury)
3 tbsp olive oil
juice from 1 lime
1-2 tsp honey (depending on how sweet/tart you want the dressing to be)
dash of salt and pepper
- Toss all ingredients into a large bowl.
- Throw dressing on top and mix gently.
